I make some weird things to eat now that Al is no longer here. I can not even give them a proper title, as I throw things together until I get it to the look and taste of edible. I thought I would let you know what I just prepared for myself for supper.
I browned a pound of ground turkey. While that was browning I cooked some whole wheat spaghetti. After the spaghetti had been drained, I added the cooked and crumbled meat. To this I added black and green olives, one large jar of spaghetti sauce with mushrooms, some fat-free shredded mozzarella cheese and one can of mushrooms. I mixed all of this and then added pepper, curry, onion flakes, garlic, a little basil and parmesan cheese. I stirred it constantly on low until cheese was melted. I tasted it and didn’t keel over from a bad taste, so this was complete.
I shredded by hand two carrots and a half-head of cabbage. I mixed some dill, celery flakes, paprika, pepper and a touch of dill pickle juice. I added fat-free sour cream and and a very small dash of sugar then stirred well. This tasted pretty darn tasty.
I took some whole carrots that had the ends snipped off and were cleaned and nuked them for six minutes. Then I added curry, salt and butter. I mixed well with the left-over sour cream. It may not sound delicious, but Al would always ask for seconds on this. The carrots I will save for another meal, probably tomorrow.
I am not a chef but I do a pretty good job at throw-it-together meals with what I can find lying around the kitchen. No dessert, unless I have 1/2 cup of pineapple. This fruit tends to boost my sugars up quickly, so I have to go easy on this and most fruits. Apples are about the only fruit that keeps my sugars level.
Well now you know a little more about me. Just call me the fixer-upper girl. LOL

there you go!!!!! because it is either eggs or cereal for breakfast. not much work in that, and lunch is what ever will hold me until supper. LOL

Mary and I make all sorts of combinations with ground beef and some sort of packaged stuff, either macaroni and cheese or Rice-A-Roni. We call those combinations “glop.” Sounds awful, but tastes pretty good, actually. We just got a contact grill (not a George Foreman, but similar) and have been cooking on that a lot. Cooking for two can sometimes be as problematic as cooking for one.

I understand what you are saying. When my brother was here, I didn’t have too much problem with meals. he was a good eater and he was great with left-overs, but now with just me and being a diabetic, low salt, no fat, it is hard. This meal will feed me all week, which is the highlight for me. LOL

all sounds good to me… it is so difficult to cook for just one or two, hubs like a bowl of cereal or a sandwich for dinner as much as he likes a big meal, me I can get by with a salad or cheese and crackers but I prefer a full meal…and there in lies my FULL figure! LOL

LOL Terry! That does sound like quite a mash up. Personally, I’ve never really taken the time to go the recipe book way. I pick a taste in my head and go for it, and it turns out alright……even if it’s glop 😉 As long as its edible Terry, you’re doing great in my opinion 😀

Well better glop, and glob, than slop. I once had my dad call my macaroni mishap mashmaroni. Tasted great though! Something about adding the chicken in its sauce on top of the mash….erm macaroni did wonders for it. Perhaps it was the pineapples and honey mustard but all in all a decent effort 😉 I think we probably do cook alike. I’ve always wondered what it would be like to be able to stand with you in a kitchen and bake and taste 😀
