Life isn’t easy, well maybe some days are. I was so excited when I saw this on my Facebook page. Easy recipes for the crock pot with only three ingredients. Can you believe that? Me either, so I have to share with you so you can say wow too.
Slow Cooker BBQ Chicken
Ingredients
4 chicken breasts
1/2 bottle or can of root beer (full sugar not diet) – you can use Coke or Dr. Pepper if you prefer
18 oz. bottle of BBQ sauce
1/4 Tsp Salt
1/4 Tsp Pepper
Directions:
Place chicken breasts and root beer in a slow cooker and cook for about 3 hours on high. Shred and drain most of the liquid. Leave a little so chicken doesn’t get dry. Add salt & pepper. Pour in a bottle of BBQ sauce and let cook another 15-20 minutes in slow cooker. Serve on rolls. I sometimes add avocado or even saute onion to serve on the sandwich. Yum!
Creamy Chicken Tacos
So here it is… short and sweet. Add 1 can of Rotel Tomatoes (I use original, but you can use other flavors to suit your families taste) to 3 boneless skinless chicken breasts. Let it cook on low in your slow cooker for 6-8 hours. 30 minutes before it is done open the lid and use forks or a pair of tongs to stir and shred the chicken. This should be very easy at this point. Then add 4 oz (1/2 brick) of cream cheese. Don’t stir the cheese in, just leave it in there for the remainder of the 30 minutes. When the final timer goes off stir the cheese (which will now be perfectly softened and prevent any lumps) into the meat mixture.
That really is all there is to it! It is creamy, flavorful and wonderful! I like to serve it the first night I make it in tacos. Just set up a bar with tortillas, cheese, tomatoes, lettuce, sour cream, cilantro or whatever your family likes and let them go to town. In my house there is no better way to get the kids to eat their dinner than letting them make it themselves! So have fun with it!
Tortellini Crock Pot Meal
Directions
Put all ingredients into crock pot, chunking up the cream cheese, and cook on low for 5 hours.
I used the meat tortellini, added a side salad with crusty Italian bread and it was a hit.
The next time I make it I’m going to try cheese tortellini and maybe add some chicken.

I hadn’t cooked in forever until Tom became so ill this time. Now, it’s another job for me. I received an insta-pot from my critique partner for Christmas and boy does it ever make my life easier. I thought using a slow cooker was great – with an insta-pot I can think of something at the last minute and still have a delicious dinner in 30 minutes or less with all natural ingredients.

It’s so-o-o-o much better. My crock pot has been relegated to the highest cabinet in the kitchen. The insta-pot has a crock pot mechanism built into it. Mine was ordered from Amazon or you can read about them at http://www.InstaPot.com.
