Caramel Apple Cheesecake Bars

One bite of these Caramel Apple Cheesecake Bars will leave you wanting another! Cookie crust with creamy cheesecake filling, fresh apples, and a thick brown sugar streusel, all topped with a drizzle of decadent caramel sauce!

INGREDIENTS:

FOR THE CRUST:

  • 1 box (11 oz) vanilla wafer cookies (about 3 cups)
  • 1/2 cup unsalted butter, melted

FOR THE FILLING:

  • 1/3 cup heavy whipping cream
  • 1/2 cup white chocolate morsels
  • 2 packages (8 oz each) cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 1/2 tsp cornstarch
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cinnamon
  • 1 package (12 oz) Crunch Pak sliced apples (peeled), about 4 cups diced apples

FOR THE STREUSEL:

  • 1 cup light brown sugar, packed
  • 3/4 cup quick oats
  • 3/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/4 cup caramel sauce, for garnish

DIRECTIONS:

  1. Preheat oven to 350 degrees F. Line a 9-inch square baking dish with foil. Set aside.
  2. In a food processor, process cookies until fine crumb. Slowly add in melted butter and mix until completely combined (I just pulse a few times). Press into the bottom of your prepared dish.
  3. Bake crust for about 8 minutes, remove and cool while preparing cheesecake filling (doesn’t need to be cooled completely).
  4. For the filling, combine white chocolate chips and heavy cream in a microwave safe bowl. Heat one minute and stir until melted and smooth (heat additional 15 seconds if needed). Set aside.
  5. In a mixer, combine cream cheese with sugar and cornstarch and beat until fluffy, about 3-4 minutes. Beat in sour cream, eggs, vanilla, and spices. Slowly beat in white chocolate mixture. Pour over prepared crust. Top with diced apples. Set aside.
  6. In a bowl, combine streusel ingredients and mix with hands until crumbly. Sprinkle over apples. Return to oven and bake for 40 minutes. Center may be slightly jiggly. Cool completely then refrigerate for at least 3 hours (or overnight).
  7. When ready to serve, cut into bars and drizzle with caramel sauce. ENJOY!

Apple Matzo Mini Cakes


While at the Senior Center today I picked up this recipe. I haven’t tried it, but thought I would share if you.

Apple Matzo Mini Cakes

 

Ingredients

Cooking Spray

4 large eggs

6 Tbs. kosher for oil

1 C. sugar

1 C. unsalted matzo meal

3 Tbs. potato starch

1/8 t. salt

1 medium green apple, peeled, cored, and diced

Cinnamon sugar to taste

 

Directions

Preheat oven to 350F. Spray a standard muffin tin with cooking spray.

Whisk eggs and oil together in a medium bowl. Stir in sugar, matzo meal, potato starch, and salt. Stir in apples.

Fill each muffin cup 3/4 full of batter. Sprinkle with cinnamon sugar.

Bake 15 minutes

Allow to cool on a cooling rack before serving.

Makes 8-10 servings

Can’t Get Those Words Out of my Mind


I went out with my family tonight to supper. I had fish for my meat selection and big, breaded mushrooms. Talk about going off the diet wagon. They then stopped here at my house for a short visit and then headed to their own home. I love spending time with them.

I think about my other kids and grandchildren back home and my heart pings a little as I realize how much I miss them. I am hoping to hitch a ride with my son-in-law when he heads back up north; then I will get to see everyone.

Today the clouds were put away and the big, warm sunshine came out. It felt wonderful to me. It is not supposed to rain for a few days now, so hope to really enjoy it. I think the temperature rose to 78 today.

Have you ever been doing nothing and suddenly some words pop into your head and you just can’t seem to rid them? I started doing that about fifteen minutes ago and now I bet I have repeated the words ten times in  my head. Is there some reason for this, or am I just getting crazy in my older years.

What was it that came alive in my thoughts? It was this.

Why in the world would a gal my age be pumping out the words to an old nursery rhyme? I do know that I feel a few hunger pangs in my stomach; but then again, I have never had porridge, so I don’t even know if I would like it.

I actually am considering having a bowl of cereal here in a few minutes. I  purchased Peanut Butter Cheerios tonight and it sounds pretty good right now. Either that or I will have a cut-up apple with some peanut butter on it. Do you like that? Or tell me what you like to snack on before bedtime.
