These Rainbow Chip Brownies are made using the best homemade buttermilk brownie recipe. Similar to Cosmic Brownies, these are adorned with colorful rainbow chips!
4 cups crispy cereal squares
1 cup peanuts
1 cup raisins
1/2 cup chopped dried apples
1 cup candy-coated chocolate pieces
Combine all ingredients in a large bowl and serve.
Cinnamon Cookie Crisps
1 cup butter, room temperature
1/2 cup brown sugar
1 cup sugar, divided
2 eggs, divided
1 teaspoon vanilla extract
1 tablespoon lemon zest
3 cup flour
1 teaspoon salt
1 teaspoon, plus 1 tablespoon cinnamon
2 tablespoons milk
Beat butter, brown sugar, and 3/4 cup sugar in a medium bowl with a hand mixer until fluffy. Beat in 1 egg, vanilla, and lemon zest
Stir in flour, salt, and 1 teaspoon cinnamon. Roll dough into a ball, cover in plastic wrap, and place in the freezer for 10 minutes.
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Sprinkle a clean working surface with flour. Roll out dough. Using a knife or a pizza wheel, cut dough into squares about 2×2 inches. Place on a prepared baking sheet
Whip the milk and remaining egg in a small bowl and brush over cookie squares. Combine 1/4 cup sugar and 1 tablespoon cinnamon in a separate small bowl and sprinkle evenly over cookies.
Bake 10-12 minutes. Allow to cool slightly before serving.
Makes 16-20 servings.
